This is the best recipe for ginger bread men that I have ever tried. You could even make the dough long before Chrismas and keep it in the freezer. Make sure to read through the recipe before you begin, and measure up all the ingredients.
Ingredients
250 g golden syrup (lys sirup)250 g sugar
2 tbs cinnamon
1 tbs ground ginger (malt ingefær)
1/2 tbs ground cloves (malt nellik)
250 g butter
1 tbs bicarbonate of soda (natron)
2 eggs
700 g flour (you might need a bit more)
Method
Heat the syrup and sugar in a caserole gently, until it simmers.
Add the ginger, cloves and cinnamon and remove from the heat.
Add the bicarbonate of soda and stir well.
Pour the warm mixture over the cold butter and stir while doing it. It might be a good idea to use a mixer.
Whisk the eggs and stir into the mixture. Add the flour a little at a time until you get an even but firm dough.
Leave the dough in the fridge for at least 1 hour.
Preheat the oven to 200˚C
Devide the dough into smaller pieces, and roll it out with a rolling pin on a floured surface. It should be about 2 mm and even. Use cookie cutters to cut out a variety of shapes.
Place 3 cm apart on ungreased baking sheets. Bake for 7 -10 minutes, or until lightly golden-brown. Leave on the tray for 10 minutes and then move to a wire rack to finish cooling.
When cooled decorate with icing.
